Oven Baking Unevenly? Here Is What Is Usually Wrong

Uneven baking is rarely the oven being 'old'. It is nearly always one of four specific, fixable faults.

Short answer

Uneven oven baking is usually caused by a failed bake element, an out-of-calibration temperature sensor, a worn door gasket allowing heat escape, or a convection fan that has stopped circulating air.

Check the element first

On an electric oven, look at the bake element with the oven cold. A visible break, blister or bright spot means it has failed. This is a straightforward replacement and one of the more common causes of one-sided baking.

Test the temperature sensor

An oven thermometer placed on the centre rack will tell you quickly whether the oven is running hot or cold against its setting. A consistent offset of more than 25°F points to a sensor drifting out of spec. Many ovens allow recalibration; some need the sensor replaced.

Inspect the door seal

Run your hand around the door edge while the oven is hot. Escaping heat means the gasket has hardened or the hinges have sagged. Either lets the oven cycle constantly without holding a stable temperature.

Confirm the convection fan

On a convection oven the fan should be audible and steady. A fan that has stopped, or a failed convection element behind it, produces exactly the uneven bake people describe.

Gas ovens are different

On gas, uneven or weak heat usually points to the igniter. It glows but no longer draws enough current to open the gas safety valve fully. It is the single most common gas oven fault we attend.
